- 1 can black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Juice of 1 lime
- Salt to taste
- 8 small corn or flour tortillas
- Cooking spray or olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat a little oil over medium heat. Add the onion and garlic, sauté until translucent and fragrant, about 3-4 minutes.
- Stir in the black beans, corn, bell pepper, cumin, chili powder, lime juice, and salt. Cook for another 5 minutes.
- Fill each tortilla with a spoonful of the mixture, roll tightly, and place seam-side down on a baking sheet.
- Spray the taquitos lightly with cooking spray or brush them with olive oil.
- Bake for 20-25 minutes until golden and crispy.
- Serve warm with your favorite dipping sauce.
