Description

These Baked Black Bean Taquitos are a healthy and easy weeknight dinner option, packed with flavor and perfect for the entire family.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Juice of 1 lime
  • Salt to taste
  • 8 small corn or flour tortillas
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat a little oil over medium heat. Add the onion and garlic, sauté until translucent and fragrant, about 3-4 minutes.
  3. Stir in the black beans, corn, bell pepper, cumin, chili powder, lime juice, and salt. Cook for another 5 minutes.
  4. Fill each tortilla with a spoonful of the mixture, roll tightly, and place seam-side down on a baking sheet.
  5. Spray the taquitos lightly with cooking spray or brush them with olive oil.
  6. Bake for 20-25 minutes until golden and crispy.
  7. Serve warm with your favorite dipping sauce.
