Description

These Banana S’mores Muffins combine the delightful essence of classic s’mores with the comforting familiarity of ripe bananas, making them a sweet indulgence perfect for any occasion.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Combine the mashed bananas, milk, vegetable oil, egg, and vanilla extract in a large bowl until smooth and creamy.
  3. Whisk together the flour, graham cracker crumbs, sugar, cocoa powder, baking powder, baking soda, and salt in another bowl until well combined.
  4. Mix the dry ingredients into the wet ingredients gradually until just combined—don’t over-mix!
  5. Fold in the mini marshmallows and chocolate chips gently.
  6. Fill each muffin cup with the batter, about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool slightly before serving.

Notes

You can prepare the batter the night before and store it in the fridge. Use a serrated knife for clean edges when slicing.
