- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 1/2 cup graham cracker crumbs
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder

- 1/4 teaspoon salt
- 1/2 cup mini marshmallows
- 1/2 cup chocolate chips
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Combine the mashed bananas, milk, vegetable oil, egg, and vanilla extract in a large bowl until smooth and creamy.
- Whisk together the flour, graham cracker crumbs, sugar, cocoa powder, baking powder, baking soda, and salt in another bowl until well combined.
- Mix the dry ingredients into the wet ingredients gradually until just combined—don’t over-mix!
- Fold in the mini marshmallows and chocolate chips gently.
- Fill each muffin cup with the batter, about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool slightly before serving.
Notes
You can prepare the batter the night before and store it in the fridge. Use a serrated knife for clean edges when slicing.
