- 1/2 cup breadcrumbs

- 2 large eggs

- Salt and pepper to taste
- Oil for frying
- Sour cream or yogurt for serving
Instructions
- In a large bowl, combine the chopped broccoli, flour, breadcrumbs, Parmesan cheese, eggs, garlic powder, salt, and pepper. Mix until well combined.
- Heat oil in a frying pan over medium heat until hot but not smoking.
- Spoon the broccoli mixture into the pan, flattening each fritter slightly with a spatula.
- Fry until golden brown, about 3-4 minutes on each side.
- Remove the fritters and place them on paper towels to drain excess oil.
- Serve warm with a dollop of sour cream or yogurt.
Notes
Make ahead and store the broccoli mixture in the fridge for up to a day. For a healthier option, bake at 400°F for about 20 minutes, flipping halfway through.
