Description

Delicious, crispy broccoli fritters packed with nutrition, perfect for a cozy dinner or snack.


Ingredients

  • 2 cups broccoli florets, steamed and chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying
  • Sour cream or yogurt for serving

Instructions

  1. In a large bowl, combine the chopped broccoli, flour, breadcrumbs, Parmesan cheese, eggs, garlic powder, salt, and pepper. Mix until well combined.
  2. Heat oil in a frying pan over medium heat until hot but not smoking.
  3. Spoon the broccoli mixture into the pan, flattening each fritter slightly with a spatula.
  4. Fry until golden brown, about 3-4 minutes on each side.
  5. Remove the fritters and place them on paper towels to drain excess oil.
  6. Serve warm with a dollop of sour cream or yogurt.

Notes

Make ahead and store the broccoli mixture in the fridge for up to a day. For a healthier option, bake at 400°F for about 20 minutes, flipping halfway through.
