- 2 cups rolled oats
- 1 cup blueberries (fresh or frozen)
- 1/2 cup honey or maple syrup
- 1/4 cup almond butter (or peanut butter)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1/4 cup chopped nuts (optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy removal later.
- In a large bowl, combine the rolled oats, cinnamon, and salt, mixing until well blended.
- Whisk together the honey (or maple syrup), almond butter, applesauce, and vanilla extract until creamy and smooth in a separate bowl.
- Gently fold the wet ingredients into the dry ingredients, mixing just until combined. Then, carefully add in the blueberries and nuts if using.
- Pour the mixture into the prepared baking dish, pressing it down evenly with a spatula.
- Bake for 25–30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for about 10 minutes before lifting them out using the parchment overhang. Allow them to cool completely on a wire rack before slicing into squares.
Notes
These bars can be made a few days in advance; simply store them wrapped in plastic wrap or in an airtight container to keep them fresh.
