Description

A cozy morning treat featuring the delicious combination of sweet blueberries and hearty oats, perfect for busy mornings.


Ingredients

  • 2 cups rolled oats
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup honey or maple syrup
  • 1/4 cup almond butter (or peanut butter)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup chopped nuts (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy removal later.
  2. In a large bowl, combine the rolled oats, cinnamon, and salt, mixing until well blended.
  3. Whisk together the honey (or maple syrup), almond butter, applesauce, and vanilla extract until creamy and smooth in a separate bowl.
  4. Gently fold the wet ingredients into the dry ingredients, mixing just until combined. Then, carefully add in the blueberries and nuts if using.
  5. Pour the mixture into the prepared baking dish, pressing it down evenly with a spatula.
  6. Bake for 25–30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Let the bars cool in the pan for about 10 minutes before lifting them out using the parchment overhang. Allow them to cool completely on a wire rack before slicing into squares.

Notes

These bars can be made a few days in advance; simply store them wrapped in plastic wrap or in an airtight container to keep them fresh.
