- 4 boneless, skinless chicken breasts or thighs
- 1 cup pineapple chunks (fresh or canned in juice)
- ½ cup brown sugar
- ¼ cup soy sauce
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp olive oil
- ½ tsp chili flakes (optional for spice)
- 2 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- If grilling, preheat your grill on medium-high heat. For baking, preheat the oven to 375°F (190°C).
- In a mixing bowl, whisk together brown sugar, soy sauce, minced garlic, grated ginger, olive oil, chili flakes, lime juice, salt, and pepper.
- Place chicken in a resealable bag or shallow dish and pour half the marinade over it. Marinate for at least 30 minutes or overnight.
- If grilling, remove chicken from marinade and grill for 6-8 minutes per side, basting with marinade. Grill pineapple slices alongside.
- If baking, transfer marinated chicken to a baking dish, pour remaining marinade over it, and add pineapple chunks. Bake for about 30 minutes, until cooked through.
- If slow cooking, place chicken and pineapple in a slow cooker, pour marinade over, and cook on low for 4-5 hours.
- Garnish with cilantro and serve warm with steamed rice or grilled veggies.
Notes
Marinating the chicken overnight enhances the flavor. Feel free to swap ingredients based on availability.
