Description

Delightful Cadbury Egg Cookies that evoke nostalgic feelings with their chewy texture and colorful candy bursts, perfect for springtime.

Ingredients

Scale
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Cadbury mini eggs, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking soda, and salt in another bowl.
  5. Gradually stir the dry mixture into the wet mixture until just blended.
  6. Fold in the crushed Cadbury mini eggs.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheets for a few minutes before transferring them to wire racks.

Notes

Chill the dough for about 30 minutes if you’re in a warm climate to prevent spreading. Store cookies in an airtight container for up to a week.
