Description

Ingredients

  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F and prepare an 8×8 baking pan.
  2. Combine the melted butter and brown sugar until smooth.
  3. Add in the egg and vanilla extract, stirring until incorporated.
  4. Whisk together the flour, cinnamon, baking powder, and salt in another bowl.
  5. Fold the dry mixture into the wet ingredients until just combined.
  6. Mix in the shredded carrots gently.
  7. Beat the cream cheese until smooth in a separate bowl, then add the sugar, egg yolk, and vanilla, mixing until velvety.
  8. Pour the carrot cake batter into the prepared pan, smoothing it evenly.
  9. Add dollops of the cheesecake mixture on top and swirl together.
  10. Bake for 25-30 minutes, until a toothpick comes out clean.
  11. Cool completely before slicing into squares.

Notes
