Instructions
- Preheat your oven to 350 degrees F and prepare an 8×8 baking pan.
- Combine the melted butter and brown sugar until smooth.
- Add in the egg and vanilla extract, stirring until incorporated.
- Whisk together the flour, cinnamon, baking powder, and salt in another bowl.
- Fold the dry mixture into the wet ingredients until just combined.
- Mix in the shredded carrots gently.
- Beat the cream cheese until smooth in a separate bowl, then add the sugar, egg yolk, and vanilla, mixing until velvety.
- Pour the carrot cake batter into the prepared pan, smoothing it evenly.
- Add dollops of the cheesecake mixture on top and swirl together.
- Bake for 25-30 minutes, until a toothpick comes out clean.
- Cool completely before slicing into squares.
Notes
