- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs (panko for extra crispiness!)
- 1/2 cup freshly grated Parmesan cheese
- 1 cup Caesar salad dressing
- 2 cups chopped Romaine lettuce
- Freshly cracked black pepper, to taste
- Soft sandwich rolls or ciabatta bread
- Optional: sliced tomatoes or avocado for added touches
Instructions
- Preheat your oven to 400°F (200°C). Spread the breadcrumbs evenly on a baking sheet and toast them for about 5-7 minutes until golden brown.
- Season the chicken breasts with salt, pepper, and a dash of garlic powder if desired.
- Heat a skillet over medium heat and add olive oil. Once hot, cook the chicken for about 6-7 minutes on each side, or until golden brown and an internal temperature of 165°F (75°C) is reached.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
- Combine chopped Romaine lettuce with Caesar dressing in a medium bowl, tossing until evenly coated.
- Assemble your sandwich: take a piece of bread, layer with crispy chicken strips, add the dressed Caesar salad, and finish with a sprinkle of Parmesan.
- Place the top of the sandwich on and press down gently. Optionally, grill in the skillet for a couple of minutes on each side until the bread is toasty and warm.
- Serve warm, with an extra sprinkle of Parmesan on top, and enjoy!
Notes
For a spicy kick, add jalapeños or sriracha. For vegetarian options, use grilled veggies instead of chicken.
