- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 cup (224g) unsalted butter, room temperature
- 1 1/2 cups (310g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sugar (additional for rolling)
Instructions
- Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.
- Combine the flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
- Cream the butter and sugar in a large mixer bowl until light and fluffy.
- Add the eggs, one at a time, mixing well after each.
- Pour in the vanilla extract and mix until combined.
- Gradually add the dry ingredients, mixing just until the dough comes together.
- Form the dough into 1 1/2 tablespoon-sized balls, rolling them in additional sugar.
- Place the balls on the baking sheet and press down slightly.
- Bake for 7-8 minutes until puffed but not overbaked.
- Cool on baking sheets for 4-5 minutes before transferring to a wire rack.
Notes
Customize with mint extract, nuts, chocolate chips, or sprinkles for a festive twist. Store cookies in an airtight container for up to a week.
