- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup melted butter
- 2 tbsp honey
- 1 egg
- 1/2 cup corn kernels
- For Honey Butter Glaze:
- 1/4 cup melted butter
- 2 tbsp honey
Instructions
- Preheat your oven to 375°F and grease a mini muffin tin.
- In a large mixing bowl, whisk together the yellow cornmeal, all-purpose flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix the milk, melted butter, honey, and egg together until smooth.
- Gently pour the wet mixture into the dry ingredients, folding until just combined.
- Fold in the corn kernels.
- Spoon the batter into the muffin cups, filling each about 3/4 full.
- Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
- While the poppers bake, prepare the honey butter glaze by mixing the melted butter and honey.
- Brush the warm poppers generously with the honey butter glaze.
Notes
Feel free to customize with different mix-ins like cheese or herbs. You can make the batter a day in advance and refrigerate.
