Description

A cozy weeknight dinner featuring tender chicken breasts in a creamy Mediterranean sauce with fresh vegetables.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken with salt and pepper, then add it to the skillet. Cook until browned on both sides and cooked through, about 6-7 minutes per side.
  3. Remove the chicken and set aside.
  4. In the same skillet, add onion and garlic, sautéing until fragrant.
  5. Add cherry tomatoes and spinach, cooking until the spinach wilts.
  6. Pour in the heavy cream and stir in the oregano.
  7. Return the chicken to the skillet, coating it in the creamy sauce.
  8. Simmer for 2-3 minutes, then garnish with fresh parsley before serving.

Notes

For a zesty twist, add lemon juice or feta cheese. Store leftovers in an airtight container for up to 3 days.
