Description

A delightful fusion of classic crème brûlée and cookies, these treats are perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vanilla pastry cream
  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually blend this into the butter mixture until fully combined.
  5. Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, spacing them a few inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
  7. Allow to cool after removing from the oven.
  8. Once cooled, pipe or spread the vanilla pastry cream on top of each cookie.
  9. Sprinkle a thin layer of granulated sugar over the cream and use a kitchen torch to caramelize the sugar until golden and crispy.
  10. Allow to cool before serving.

Notes

Make-Ahead Friendly: Prepare the cookie dough ahead of time and keep it in the fridge for up to three days. Store cookies in an airtight container at room temperature for up to 5 days.
