- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vanilla pastry cream
- 1/4 cup granulated sugar (for caramelizing)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time and stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually blend this into the butter mixture until fully combined.
- Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, spacing them a few inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
- Allow to cool after removing from the oven.
- Once cooled, pipe or spread the vanilla pastry cream on top of each cookie.
- Sprinkle a thin layer of granulated sugar over the cream and use a kitchen torch to caramelize the sugar until golden and crispy.
- Allow to cool before serving.
Notes
Make-Ahead Friendly: Prepare the cookie dough ahead of time and keep it in the fridge for up to three days. Store cookies in an airtight container at room temperature for up to 5 days.
