Description

A comforting skillet dish with crispy potatoes and smoky turkey bacon, perfect for weeknight dinners or lazy brunches.


Ingredients

  • 1 1/2 lbs Yukon Gold or red potatoes, scrubbed and diced
  • 8 oz thick-cut turkey bacon, chopped
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons butter (or olive oil for dairy-free)
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: 1/2 teaspoon garlic powder or 1 clove garlic, minced
  • Optional: 1/4 teaspoon smoked paprika

Instructions

  1. Scrub and dice potatoes into 1/2-inch cubes. Thinly slice onion and chop turkey bacon into bite-sized pieces.
  2. Heat a large skillet over medium heat. Add chopped turkey bacon and cook until golden brown and crispy (about 6-8 minutes).
  3. Push bacon to one side of the skillet. Add sliced onions and a pinch of salt. Sauté until softened (about 2-3 minutes).
  4. Stir in the diced potatoes along with seasonings. Toss to coat well.
  5. Spread the potatoes and bacon in an even layer and cook undisturbed for about 4-5 minutes.
  6. Flip the potatoes and continue cooking, stirring every 3-4 minutes, until fork-tender and crispy (about 10-15 minutes).
  7. Dot the top with remaining butter and broil for 2-3 minutes for added crispiness.
  8. Sprinkle with fresh parsley, adjust seasoning as needed, and serve hot.

Notes

Feel free to customize with your favorite vegetables or seasonings. Leftovers can be stored in an airtight container for up to 3 days.
