Ingredients

  • 2 lbs corned beef brisket
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 56 small potatoes, halved
  • 4 carrots, chopped
  • 1 small head of cabbage, cut into wedges
  • 1 tablespoon pickling spice
  • Salt and pepper to taste

Instructions

  1. Place the corned beef in the crock pot and cover it with water, letting those lovely flavors begin to mingle.
  2. Add the onion, minced garlic, and pickling spice, watching as the magic of savory scent begins.
  3. Set your crock pot on low and let it cook for 480-600 minutes, or until the corned beef is tender enough to practically melt in your mouth.
  4. In the last four hours of cooking, add in the halved potatoes and chopped carrots—these vibrant veggies make the dish even more comforting.
  5. As the meal comes together, in the final hour of cooking, add the cabbage wedges for that perfect crisp-tender finish.
