Instructions
- Preheat the oven to 375°F (190°C).
- Heat a drizzle of olive oil in a skillet over medium heat and add the minced garlic, sautéing until fragrant.
- Add the diced mushrooms to the skillet and cook until tender.
- Combine the cooked mushrooms with softened cream cheese, shredded mozzarella, thyme, and a sprinkle of salt and pepper in a mixing bowl.
- Cut a pocket into each chicken breast without slicing all the way through.
- Stuff each pocket with the creamy mushroom filling.
- Secure the opening with toothpicks if needed.
- Sear the stuffed chicken breasts in a skillet with olive oil until golden brown on both sides.
- Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through.
- Let the chicken rest for a few minutes before serving.
