- 1½ lbs sirloin steak, cut into bite-sized cubes
- 1½ lbs baby potatoes, halved or quartered
- 4 tablespoons olive oil (divided)
- 4 tablespoons butter
- 5–6 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Toss in the halved or quartered baby potatoes. Season with salt, pepper, and paprika. Cook until fork-tender and golden brown, about 15 minutes.
- Remove the potatoes from the skillet and set aside.
- Season the bite-sized sirloin cubes with salt, pepper, and dried Italian herbs.
- Add 1 tablespoon of olive oil and 2 tablespoons of butter to the same skillet. When the butter sizzles, sear the steak in batches for 2–3 minutes per side.
- Reduce the heat to medium-low, add the remaining 2 tablespoons of butter and minced garlic, sautéing until fragrant for about 1 minute.
- Return the crispy potatoes to the skillet and toss everything together, cooking for an additional 1–2 minutes.
- Garnish with freshly chopped parsley and serve hot.
Notes
Make-ahead advice: Marinate the steak cubes in olive oil, garlic, and herbs for extra flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
