A warm and comforting soup with zesty ginger and lime, tender chicken, and creamy cilantro rice.
Ingredients

- 2 cups chicken broth
- 1 pound chicken breast, cubed
- 1 cup mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 limes, juiced and zested
- 1 cup rice
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups water
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add ginger and mushrooms, cooking for 3-4 minutes until the mushrooms are golden and tender.
- Toss the cubed chicken breast into the pot, cooking until no longer pink.
- Pour in chicken broth, water, lime juice, and zest. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Meanwhile, cook rice according to package instructions and stir in chopped cilantro.
- Serve the soup over a scoop of cilantro rice.
Notes
This soup keeps well in the fridge for up to 3 days. Can be made ahead of time for better flavor.
