- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup gluten-free flour
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth in a mixing bowl. Stir in the melted butter.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla; mix well.
- Stir in the gluten-free flour until just incorporated. If using, fold in the chocolate chips and walnuts.
- Pour the batter into the prepared loaf pan.
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store leftover banana bread tightly wrapped at room temperature for up to three days or freeze for longer storage.
