Description

A deliciously cozy gluten-free banana bread that’s perfect for breakfast or a delightful snack.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free flour
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth in a mixing bowl. Stir in the melted butter.
  3. Mix in the baking soda and salt.
  4. Add the sugar, beaten egg, and vanilla; mix well.
  5. Stir in the gluten-free flour until just incorporated. If using, fold in the chocolate chips and walnuts.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store leftover banana bread tightly wrapped at room temperature for up to three days or freeze for longer storage.
