  • 1 cup cooked rice or quinoa
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • For the tzatziki sauce:
  • 1 cup Greek yogurt
  • 1 cucumber, finely grated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill or mint
  • Juice of 1 lemon

Instructions

  1. Start by marinating the chicken breasts. In a bowl, combine 2 tablespoons of olive oil, 1 teaspoon of oregano, and sprinkle with salt and pepper. Allow the chicken to soak in those flavorful Mediterranean vibes for at least 30 minutes.
