- 2 chicken breasts
- 1 cup cooked rice or quinoa
- 1 cucumber, diced
- 1 tomato, diced
- 1 red onion, diced

- For the tzatziki sauce:
- 1 cup Greek yogurt
- 1 cucumber, finely grated
- 2 cloves garlic, minced
- 1 tablespoon fresh dill or mint
- Juice of 1 lemon
Instructions
- Start by marinating the chicken breasts. In a bowl, combine 2 tablespoons of olive oil, 1 teaspoon of oregano, and sprinkle with salt and pepper. Allow the chicken to soak in those flavorful Mediterranean vibes for at least 30 minutes.
