Description

A refreshing and healthy salad featuring crunchy cabbage, crisp cucumbers, and a creamy dressing made with Greek yogurt.

Ingredients

Scale
  • 1 small head of cabbage, finely diced
  • 4 green onions, chopped
  • 1 cucumber, diced
  • 1/4 cup chives, chopped
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the finely diced cabbage, chopped green onions, diced cucumber, and chopped chives. Toss them gently to mix.
  2. In a separate bowl, whisk together the Greek yogurt (or sour cream), olive oil, apple cider vinegar, and lemon juice until smooth and creamy.
  3. Season the dressing with salt and pepper, adjusting to taste.
  4. Pour the creamy dressing over the salad mixture and toss gently until everything is well combined.
  5. For the best flavors, serve immediately or refrigerate the salad for 30 minutes, allowing the ingredients to meld beautifully.

Notes

Make the dressing a day in advance for better flavor. Use fresh ingredients and enjoy within 2 days for the best taste.
