Delightful grilled shrimp wrapped in creamy Caesar dressing, perfect for quick lunches or easy weeknight dinners.


Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 1/2 cup mayonnaise
  • 2 tbsp Parmesan cheese (grated)
  • 1 tbsp lemon juice
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 garlic clove (minced)
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups romaine lettuce (chopped)
  • 1/2 cup Parmesan cheese (shaved)
  • 1/2 cup croutons (optional)
  • 4 slices turkey bacon (cooked and crumbled, optional)

Instructions

  1. Prepare the Shrimp: In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and black pepper until well coated.
  2. Grill the Shrimp: Preheat your grill to medium heat and grill the shrimp for 2-3 minutes per side until pink and opaque.
  3. Make the Caesar Dressing: Whisk together mayonnaise, grated Parmesan cheese, lemon juice, Worcestershire sauce, Dijon mustard, and minced garlic. Season with salt and pepper.
  4. Assemble the Wraps: Warm the tortillas in a skillet for about 30 seconds, then spread a layer of Caesar dressing on each.
  5. Fill the Wraps: Add grilled shrimp, chopped romaine, shaved Parmesan, and croutons or crumbled turkey bacon.
  6. Roll Them Up: Fold the sides of the tortilla inward and roll tightly from the bottom up.
  7. Serve and Enjoy: Slice the wraps in half and serve immediately.

Notes

You can grill the shrimp and prepare the dressing a day in advance for quick assembly later. Substitute shrimp with chicken or tofu for variations.
