- 1 lb steak (ribeye or sirloin)
- 2 zucchinis, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup cooked brown rice or quinoa
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
Instructions
- Preheat the grill to medium-high heat.
- Season the steak with salt and pepper. Grill for about 6-7 minutes on each side or until it reaches your desired doneness. Remove from the grill and let rest before slicing.
- Toss zucchini slices with olive oil, salt, and pepper. Grill for about 3-4 minutes per side until tender and grill marks appear.
- In a small bowl, whisk together the ingredients for the sauce until well combined.
- To assemble the bowls, start with a base of brown rice or quinoa, top with sliced steak, grilled zucchini, avocado, and cherry tomatoes. Drizzle with sauce and sprinkle with cilantro. Serve immediately.
Notes
Make-ahead: You can marinate the steak a day prior and store it in the fridge for enhanced flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
