Description

A comforting and flavorful grilled steak bowl with fresh veggies and a delicious sauce that ties everything together.


Ingredients

  • 1 lb steak (ribeye or sirloin)
  • 2 zucchinis, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cooked brown rice or quinoa
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak with salt and pepper. Grill for about 6-7 minutes on each side or until it reaches your desired doneness. Remove from the grill and let rest before slicing.
  3. Toss zucchini slices with olive oil, salt, and pepper. Grill for about 3-4 minutes per side until tender and grill marks appear.
  4. In a small bowl, whisk together the ingredients for the sauce until well combined.
  5. To assemble the bowls, start with a base of brown rice or quinoa, top with sliced steak, grilled zucchini, avocado, and cherry tomatoes. Drizzle with sauce and sprinkle with cilantro. Serve immediately.

Notes

Make-ahead: You can marinate the steak a day prior and store it in the fridge for enhanced flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
