Description

A cozy dish combining caramelized sweet potatoes, seasoned ground beef, creamy cottage cheese, and avocado, drizzled with spicy hot honey.


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes on a baking sheet and roast for 40–45 minutes, stirring occasionally, until caramelized and golden brown.
  4. While roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat and sauté the diced onion until softened, about 5 minutes.
  5. Add the ground beef and taco seasoning to the skillet, cooking until the beef is browned and fully cooked.
  6. Once the sweet potatoes are ready, assemble the bowls with layers of roasted sweet potatoes, seasoned ground beef, avocado slices, and a scoop of cottage cheese.
  7. Drizzle hot honey over each bowl before serving.

Notes

You can prepare the sweet potatoes and ground beef a day in advance. Leftovers can be stored in the fridge for up to 3 days.
