Description
A cozy dish combining caramelized sweet potatoes, seasoned ground beef, creamy cottage cheese, and avocado, drizzled with spicy hot honey.

- 1 lb lean ground beef (93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated.
- Spread the sweet potatoes on a baking sheet and roast for 40–45 minutes, stirring occasionally, until caramelized and golden brown.
- While roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat and sauté the diced onion until softened, about 5 minutes.
- Add the ground beef and taco seasoning to the skillet, cooking until the beef is browned and fully cooked.
- Once the sweet potatoes are ready, assemble the bowls with layers of roasted sweet potatoes, seasoned ground beef, avocado slices, and a scoop of cottage cheese.
- Drizzle hot honey over each bowl before serving.
Notes
You can prepare the sweet potatoes and ground beef a day in advance. Leftovers can be stored in the fridge for up to 3 days.
