Description

A delightful, hearty dish featuring tender sweet potatoes and savory ground turkey, all topped with melted cheese – perfect for chilly evenings.


Ingredients

  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley or cilantro, chopped (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, heat the olive oil. Add the diced onion and sauté for 3–4 minutes until soft.
  3. Toss in the ground turkey and cook until browned, about 5–6 minutes.
  4. Stir in the minced garlic, diced bell pepper, sweet potatoes, smoked paprika, cumin, thyme, and seasoning. Cook for an additional 3–5 minutes.
  5. Transfer the mixture into the prepared baking dish. Cover with foil and bake for 25 minutes.
  6. Remove the foil, sprinkle the shredded cheese on top, and bake uncovered for an additional 10–15 minutes until the cheese is bubbly and golden.
  7. Garnish with fresh parsley or cilantro and serve hot.

Notes

This dish can be prepped a day ahead. Leftovers can be stored for up to three days in the fridge or frozen for up to a month.
