- 1 lb ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley or cilantro, chopped (optional garnish)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, heat the olive oil. Add the diced onion and sauté for 3–4 minutes until soft.
- Toss in the ground turkey and cook until browned, about 5–6 minutes.
- Stir in the minced garlic, diced bell pepper, sweet potatoes, smoked paprika, cumin, thyme, and seasoning. Cook for an additional 3–5 minutes.
- Transfer the mixture into the prepared baking dish. Cover with foil and bake for 25 minutes.
- Remove the foil, sprinkle the shredded cheese on top, and bake uncovered for an additional 10–15 minutes until the cheese is bubbly and golden.
- Garnish with fresh parsley or cilantro and serve hot.
Notes
This dish can be prepped a day ahead. Leftovers can be stored for up to three days in the fridge or frozen for up to a month.
