Description

Ingredients

  • 1 cup rolled oats
  • 1 cup apple, diced
  • 1/2 cup whole wheat flour or gluten-free flour
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rolled oats, flour, baking powder, cinnamon, and salt in a large bowl.
  3. Mix the almond butter, honey (or maple syrup), and vanilla extract in another bowl until smooth.
  4. Add the wet mixture to the dry ingredients and stir until just combined.
  5. Fold in the diced apples gently.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
