Instructions
- Preheat the oven to 350°F (175°C).
- Combine the rolled oats, flour, baking powder, cinnamon, and salt in a large bowl.
- Mix the almond butter, honey (or maple syrup), and vanilla extract in another bowl until smooth.
- Add the wet mixture to the dry ingredients and stir until just combined.
- Fold in the diced apples gently.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
