- 4 pieces Boneless, Skinless Chicken Breasts
- 3 tablespoons Honey
- 2 tablespoons Lime Juice
- 1 tablespoon Lime Zest
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 1 teaspoon Cumin
- 1 teaspoon Smoked Paprika
- Salt, to taste
- Pepper, to taste
- 2 cups Cooked Jasmine or Basmati Rice
- 1 medium Ripe Avocado, diced
- 1 tablespoon Extra Lime Juice
- 1 tablespoon Olive Oil
- Fresh Cilantro or Parsley, to taste
- Chili Flakes, to taste
- 1 tablespoon Toasted Sesame Seeds
Instructions
- In a mixing bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper until well combined.
- Marinate chicken breasts in the mixture for at least 30 minutes (or overnight) in a resealable bag.
- Preheat your grill or grill pan over medium-high heat, lightly oiling if using a grill pan.
- Grill chicken for 6-7 minutes on each side until cooked through (165°F/75°C).
- While the chicken grills, mix diced avocado with extra lime juice, olive oil, salt, and pepper. Add chopped cilantro or parsley.
- Let the grilled chicken rest before slicing.
- Serve over jasmine or basmati rice, topped with avocado mixture, chili flakes, and toasted sesame seeds.
Notes
Marinate chicken overnight for better flavor. Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
