Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Add the cold, cubed butter and blend until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries, being careful not to crush them.
  5. Pour in the buttermilk and optional vanilla extract, mixing gently until just combined.
  6. Turn the dough out onto a floured surface and pat into a 1-inch thick rectangle.
  7. Cut the dough using a biscuit cutter or knife.
  8. Place the biscuits on the prepared baking sheet and bake for 15–18 minutes, or until golden brown.
  9. Enjoy warm with butter, honey, or powdered sugar.
