Description

A cozy weeknight dinner combining the sweetness of fresh peaches with a spicy kick from jalapeños, served over tender chicken breasts.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  4. Add the chicken breasts to the skillet, searing them for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set it aside on a plate.
  6. Add the diced jalapeños and peaches to the same skillet, cooking for 2-3 minutes until slightly softened.
  7. Whisk together the honey, apple cider vinegar, water, and cornstarch in a small bowl until smooth.
  8. Pour the honey mixture over the jalapeños and peaches in the skillet, stirring well to combine.
  9. Bring this to a gentle simmer.
  10. Return the chicken breasts to the skillet and spoon some sauce over the top.
  11. Transfer the entire skillet to the preheated oven.
  12. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  13. Remove from the oven and let the chicken rest for a few minutes before serving.
  14. Serve hot, generously spooning the sauce over the chicken. Enjoy!

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave.
