Description

Ingredients

  • 2 chicken breasts
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Whisk together lime juice, olive oil, garlic powder, cumin, salt, and pepper until well combined.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  5. Remove from the grill and let rest for a few minutes.
  6. Slice the avocados and arrange them on a plate alongside the grilled chicken and halved cherry tomatoes.
  7. Drizzle with any remaining marinade and garnish with fresh cilantro before serving.
