- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp lemon zest
- 8 oz cream cheese, softened
- 1 egg
- 1/4 cup butter, softened
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin pan.
- Combine the flour, sugar, baking powder, baking soda, and lemon zest in a large mixing bowl. Stir well.
- Beat together the softened cream cheese, egg, butter, and milk in another bowl until smooth and creamy.
- Fold the wet mixture into the dry ingredients, being careful not to overmix.
- Spoon the batter into the muffin cups, filling them about 2/3 full, and bake for about 18-20 minutes.
Notes
These muffins can be baked and stored for up to three days. They also freeze well for future treats.
