Description

Delightfully tender muffins with a creamy lemon filling that are perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp lemon zest
  • 8 oz cream cheese, softened
  • 1 egg
  • 1/4 cup butter, softened
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin pan.
  2. Combine the flour, sugar, baking powder, baking soda, and lemon zest in a large mixing bowl. Stir well.
  3. Beat together the softened cream cheese, egg, butter, and milk in another bowl until smooth and creamy.
  4. Fold the wet mixture into the dry ingredients, being careful not to overmix.
  5. Spoon the batter into the muffin cups, filling them about 2/3 full, and bake for about 18-20 minutes.

Notes

These muffins can be baked and stored for up to three days. They also freeze well for future treats.
