Description

Ingredients

  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl until well combined.
  3. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
  4. Beat in the egg, fresh lemon juice, lemon zest, and vanilla extract, mixing until harmoniously combined.
  5. Gradually add the dry ingredients to the wet mixture and gently mix until just combined.
  6. Refrigerate the dough for about 30 minutes to firm up.
  7. Roll the chilled dough into small balls and coat each in powdered sugar.
  8. Place the cookies on a lined baking sheet and bake for 10-12 minutes until the edges are set and just beginning to turn golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
