- 4 large potatoes
- 1 cup cooked ground beef or turkey
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, diced
- 1 cup salsa
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and pierce them with a fork. Rub them with olive oil and sprinkle with salt. Bake in the oven for about 45-60 minutes, or until tender.
- While the potatoes are baking, heat a skillet over medium heat. Add the cooked ground beef or turkey and sprinkle in the taco seasoning. Stir until heated through.
- In a separate pot, heat the black beans and corn together.
- Once the potatoes are fully cooked, remove them from the oven and let them cool slightly before slicing them open.
- Fluff the insides of the potatoes with a fork and season with salt and pepper to taste.
- Layer the meat mixture, black beans, corn, cheese, avocado, and salsa on top of the potatoes.
