Description

A cozy weeknight dinner featuring fluffy potatoes topped with zesty taco flavors and creamy ingredients, perfect for the whole family.


Ingredients

  • 4 large potatoes
  • 1 cup cooked ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and pierce them with a fork. Rub them with olive oil and sprinkle with salt. Bake in the oven for about 45-60 minutes, or until tender.
  3. While the potatoes are baking, heat a skillet over medium heat. Add the cooked ground beef or turkey and sprinkle in the taco seasoning. Stir until heated through.
  4. In a separate pot, heat the black beans and corn together.
  5. Once the potatoes are fully cooked, remove them from the oven and let them cool slightly before slicing them open.
  6. Fluff the insides of the potatoes with a fork and season with salt and pepper to taste.
  7. Layer the meat mixture, black beans, corn, cheese, avocado, and salsa on top of the potatoes.
  8. Serve warm and enjoy your Loaded Potato Taco Bowl!
