Description

Ingredients

  • 4 large potatoes
  • 1 lb ground beef or turkey
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the potatoes into small cubes and toss them with olive oil, chili powder, cumin, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until crispy.
  2. Cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat.
  3. Add black beans and corn to the skillet, heating through until warm and combined.
  4. Assemble the taco bowls by layering the roasted potatoes, then topping with the meat mixture. Add cherry tomatoes, avocado, cheese, and a dollop of sour cream.
  5. Garnish with fresh cilantro and serve warm.
