Description

A wholesome and quick Mediterranean Chicken Stir Fry that comes together in just 30 minutes, filled with tender chicken, vibrant veggies, and a touch of feta.


Ingredients

  • 1 pound Chicken breasts, cut into uniform pieces
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Zucchini
  • 1 large Red bell pepper
  • 1 medium Red onion
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 2 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice
  • 1/2 cup Feta cheese
  • 1/4 cup Fresh parsley (optional garnish)

Instructions

  1. Prep your ingredients by washing and chopping all your vegetables and cutting the chicken into uniform pieces.
  2. In a large skillet over medium heat, add the olive oil. Once hot, add the chicken pieces, season with salt and pepper, and sauté until golden brown, about 5-7 minutes.
  3. Add the red onion, zucchini, and red bell pepper, sautéing for about 4-5 minutes until they soften.
  4. Stir in the minced garlic, sun-dried tomatoes, cherry tomatoes, olives, oregano, basil, and thyme, cooking for another 2-3 minutes.
  5. Pour the lemon juice over the stir fry and toss gently.
  6. If using, sprinkle feta over the top before serving and garnish with fresh parsley.

Notes

This dish can be made ahead by prepping ingredients in advance. Leftovers store well for up to three days in the fridge.
