Description

Quick and easy no-bake peanut butter oat cups that are rich, creamy, and perfect for any time of day.


Ingredients

  • 1.5 cups peanut butter
  • 1.5 cups rolled oats (processed finely in a food processor to make oat flour)
  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • 1 tsp coconut oil (optional)

Instructions

  1. Begin by blending the rolled oats in a high-speed blender or food processor until they turn into a fine oat flour.
  2. In a medium-sized microwave-safe bowl, add your peanut butter and maple syrup. Microwave for 40-60 seconds, then stir thoroughly until the mixture is beautifully combined and creamy.
  3. Gradually add the blended oats to the peanut butter mixture, mixing well. If the mixture appears too dry, add a bit more maple syrup or peanut butter.
  4. Prepare your muffin pan by lining it with cupcake liners or using a silicone muffin pan for easy removal.
  5. Scoop the mixture into each muffin hole, pressing down firmly to form compact cups.
  6. In a small bowl, combine the chocolate chips and coconut oil. Heat in 30-second increments, stirring until smooth.
  7. Pour a layer of melted chocolate into each muffin hole, smoothing the top. Sprinkle toppings if desired.
  8. Refrigerate the cups for 2-3 hours to set completely. Once solid, carefully remove them from the pan.
  9. Store in an airtight container in the refrigerator for up to 5 days.

Notes

These oat cups can be made in advance and stored in the fridge. Feel free to customize with different nut butters or sweeteners.
