A wholesome and comforting oatmeal muffin that’s easy to make and perfect for busy mornings.
Ingredients

- 1/2 banana, mashed
- 1/2 cup oats
- 1/2 cup plant milk (your choice!)
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 tablespoon coconut sugar
- 1 teaspoon ground cinnamon
Instructions
- Blend all the ingredients to a blender. Blend until the mixture is smooth and creamy.
- Prepare an oven-safe ramekin by greasing it with a touch of oil or non-stick spray.
- Pour the blended mixture into the ramekin. Preheat your oven or toaster oven to 400°F (200°C) and bake for 20-25 minutes until golden brown.
- Garnish with a bit more cinnamon and coconut sugar on top. Let it cool slightly before enjoying.
Notes
Feel free to customize with nuts, chocolate chips, or berries.
