Description

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, and vanilla extract. Mix well and set aside.
  3. In another bowl, combine the oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
  4. Spread the fruit mixture evenly in a baking dish and then sprinkle the oat mixture on top.
  5. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the fruit is bubbly.
