A delightful cake capturing the essence of summer with creamy frosting and bright orange notes, perfect for any occasion.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup orange juice
  • Zest of 1 orange
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1/2 cup orange juice (for frosting)
  • Zest of 1 orange (for frosting)
  • Fresh orange slices for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine flour, baking powder, and salt in a bowl. Set aside.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract, milk, orange juice, and orange zest.
  6. Gradually mix in the dry ingredients until just combined.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. Beat the softened butter in a bowl for the frosting until smooth and creamy.
  11. Gradually add the powdered sugar, mixing well.
  12. Add the heavy cream, orange juice, and zest, and beat until fluffy.
  13. Frost the top of one cake layer, stack the second layer on top, and frost the top and sides generously.
  14. Garnish with fresh orange slices for an extra splash of color.

Notes

For a twist, consider adding cocoa powder for a chocolate version, or using different citrus juices.
