Instructions
- Heat the olive oil in a large skillet over medium heat until fragrant.
- Add the diced chicken and cook until browned and cooked through, approximately 5-7 minutes.
- Toss in the onion and bell pepper, cooking until softened, about 3-4 minutes.
- Stir in the cooked rice and pour in the pineapple chunks along with their juice.
- Add the soy sauce, salt, and pepper, mixing everything well.
