Description

Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 can pineapple chunks (in juice or syrup)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until fragrant.
  2. Add the diced chicken and cook until browned and cooked through, approximately 5-7 minutes.
  3. Toss in the onion and bell pepper, cooking until softened, about 3-4 minutes.
  4. Stir in the cooked rice and pour in the pineapple chunks along with their juice.
  5. Add the soy sauce, salt, and pepper, mixing everything well.
  6. Cook until heated through, about 2-3 minutes.
  7. Garnish with green onions before serving.
