Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until creamy and fluffy.
- Add in the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add this to the butter mixture.
- Slice the well-drained pineapple rings into smaller pieces.
- Form a tablespoon of dough, flatten it, place a piece of pineapple in the center, and enclose it with the dough.
- Place the cookies on parchment-lined baking sheets and sprinkle with additional sugar.
- Bake for 12-15 minutes until edges are golden and cookies are set.
