- 2 tablespoons Olive Oil (Or avocado oil)
- 1 teaspoon Smoked Paprika (Or regular paprika)

- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (Homemade or store-bought)
- 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
- 1 cup Guacamole (Mashed avocado with lime juice)
- 1/2 cup Sour Cream (Or Greek yogurt)
- To taste Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the cubed sweet potatoes, olive oil, smoked paprika, salt, and pepper in a large bowl.
- Toss the sweet potatoes until evenly coated in the mixture.
- Spread the seasoned sweet potatoes onto a baking sheet lined with parchment paper.
- Bake for about 25–30 minutes, until tender and slightly caramelized.
- Heat a large skillet over medium heat and add the ground beef, cooking until browned.
- Stir in the taco seasoning and let it simmer for a few minutes.
- Build your taco bowl starting with a layer of roasted sweet potatoes.
- Top with seasoned meat, pico de gallo, guacamole, and sour cream.
- Sprinkle any optional toppings you desire.
