Ingredients

  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: 2-ingredient sauce (e.g., Greek yogurt and salsa)

Instructions

  1. Drizzle the olive oil in a large skillet and heat over medium heat until shimmering.
  2. Add the ground turkey to the skillet and cook, stirring often, until browned and cooked through, about 5-7 minutes.
  3. Stir in the diced sweet potatoes, black beans, and diced tomatoes, including any juices for extra flavor.
  4. Season your skillet with cumin, paprika, salt, and pepper, letting the spices envelop everything.
  5. Cover and cook until the sweet potatoes are tender and easily pierced with a fork, approximately 15-20 minutes, stirring occasionally.
  6. Serve hot and drizzle with the optional Greek yogurt and salsa sauce!
