- 1 lb shrimp, peeled and deveined
- 2 tablespoons taco seasoning
- 8 small corn or flour tortillas
- 1 cup shredded cabbage
- 1/2 cup carrots, shredded
- 1 lime, juiced
- 2 tablespoons mayonnaise
- 2 tablespoons cilantro, chopped
- Salt and pepper to taste
Instructions
- Toss the shrimp with taco seasoning until well coated.
- Heat a skillet over medium heat and cook the shrimp for about 2-3 minutes on each side until they turn pink.
- Mix the shredded cabbage, carrots, lime juice, mayonnaise, cilantro, salt, and pepper to create the refreshing slaw.
- Warm the tortillas in a pan or microwave until soft and pliable.
- Assemble by placing the cooked shrimp on the tortillas and topping generously with the lime slaw.
- Serve immediately and enjoy!
Notes
Make-ahead slaw can be stored in an airtight container in the fridge. Be careful not to overcook the shrimp.
