Description

Quick and easy shrimp tacos perfect for a busy weeknight dinner, packed with flavor and healthy ingredients.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons taco seasoning
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup carrots, shredded
  • 1 lime, juiced
  • 2 tablespoons mayonnaise
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Toss the shrimp with taco seasoning until well coated.
  2. Heat a skillet over medium heat and cook the shrimp for about 2-3 minutes on each side until they turn pink.
  3. Mix the shredded cabbage, carrots, lime juice, mayonnaise, cilantro, salt, and pepper to create the refreshing slaw.
  4. Warm the tortillas in a pan or microwave until soft and pliable.
  5. Assemble by placing the cooked shrimp on the tortillas and topping generously with the lime slaw.
  6. Serve immediately and enjoy!

Notes

Make-ahead slaw can be stored in an airtight container in the fridge. Be careful not to overcook the shrimp.
