Ingredients

  • Spring roll wrappers
  • Cabbage, shredded
  • Carrots, julienned
  • Bell pepper, thinly sliced
  • Green onions, chopped
  • Soy sauce
  • Garlic, minced
  • Ginger, minced
  • Cooking spray or oil

Instructions

  1. Mix the shredded cabbage, carrots, bell pepper, green onions, soy sauce, garlic, and ginger until well combined.
  2. Lay a spring roll wrapper on a flat surface and place a small amount of the filling in the center.
  3. Roll the wrapper tightly, folding in the sides as you go.
  4. Spray the air fryer basket with cooking spray or oil to prevent sticking.
  5. Place the spring rolls in the basket in a single layer, giving the tops a gentle spray with cooking oil.
  6. Set the air fryer to 375°F (190°C) and cook for 10-12 minutes, flipping them halfway through.
  7. Serve hot with your choice of dipping sauce.

Notes

Prepare the fillings and roll the spring rolls up to a day in advance; keep them covered in the fridge. Store cooked spring rolls in the fridge for up to 3 days.
