Description

A refreshing Asian Cucumber Salad that combines crunchy cucumbers with a zesty marinade, perfect for summer gatherings.


Ingredients

  • 5 pcs cucumbers
  • 3 tsp granulated white sugar
  • 2 tsp sesame seeds
  • 1 tsp garlic, crushed
  • 2 to 3 tbsp green onion, chopped
  • 1 ½ tbsp soy sauce
  • 3 tsp rice vinegar
  • 3 tsp Chinese chili oil
  • 1 tsp sesame oil
  • 3 tsp salt

Instructions

  1. Gather all the ingredients for your Asian cucumber salad.
  2. In a medium-sized bowl, mix together the sugar, sesame seeds, crushed garlic, and chopped green onion. Stir until combined and set aside.
  3. Cut both ends of each cucumber and prepare to slice.
  4. Using chopsticks, make diagonal cuts down the length of each cucumber, then create perpendicular cuts to form spirals.
  5. Place cucumber spirals in a bowl and sprinkle with salt, massaging it in for about 8 to 10 minutes.
  6. Rinse cucumbers under cold water to remove excess salt.
  7. Pour the sauce over the cucumbers and mix until evenly coated.

Notes

This salad can be made ahead and is perfect for barbecues and potlucks. Enjoy within 1-2 days for the best texture.
