Ingredients

  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried thyme)
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the halved baby potatoes with the olive oil, garlic, lemon juice, zest, thyme, salt, and pepper in a large bowl. Toss gently until well-coated.
