Description

Ingredients

  • 1 lb beef (sliced thinly)
  • 4 cups cabbage (shredded)
  • 1 medium onion (sliced)
  • 2 carrots (sliced)
  • 2 tablespoons peanut butter
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice (for serving)

Instructions

  1. In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering.
  2. Add the sliced beef to the skillet and stir-fry until it’s browned and cooked through, releasing all those delightful juices.
  3. Once cooked, remove the beef from the skillet and set it aside, keeping it warm.
  4. In the same skillet, toss in the sliced onion, carrots, and cabbage. Stir-fry these colorful veggies until they become tender yet still vibrant.
  5. While that’s happening, take a small bowl and mix together the peanut butter, hoisin sauce, soy sauce, and a splash of water to create a creamy sauce that’s simply irresistible.
  6. Return the beef to the skillet and pour your delightful sauce over the mixture. Stir until everything is well-coated and heated through.
  7. Season with salt and pepper to taste, adjusting as needed to suit your palate.
  8. Serve this warmth over a bed of freshly cooked rice, and watch everyone at the table smile with delight!

Notes

For extra crunch, add chopped peanuts or cashews. Can be made spicy with Sriracha or red pepper flakes.
