- 140 g unsalted butter (room temp)
- 100 g neutral oil
- 283 g whole milk (room temp)
- 2 eggs (room temp)
- 1 tbsp vanilla extract
- 227 g unsalted butter (room temp)
- 340 g powdered sugar (sifted)
- 12 oz cream cheese (cold)
- Additional spices for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together the flour, baking powder, salt, cinnamon, cardamom, ginger, allspice, nutmeg, and cloves in a large mixing bowl.
- Cream together the dark brown sugar, butter, and neutral oil in another bowl until fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Add the dry ingredients to the wet mixture, alternating with the whole milk. Mix until just combined.
- Pour the batter equally into your prepared pans and smooth the tops with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow cooling in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Beat the room temperature butter and cold cream cheese in a medium bowl until creamy and smooth.
- Gradually add the sifted powdered sugar, mixing until fully incorporated and fluffy.
- Place one cake layer on a serving plate. Spread a generous amount of cream cheese frosting on top.
- Carefully place the second cake layer on top, and frost the top and sides of the entire cake.
- Sprinkle additional spices on top for a cozy look if desired.
