Description
A heartwarming dessert featuring caramelized pineapple enhanced with brown sugar, perfect for summer gatherings.
Ingredients
Scale
- 1 ripe pineapple
- 1/4 cup brown sugar
- 2 tablespoons butter (or coconut oil for a dairy-free option)
- 1/2 teaspoon ground cinnamon (optional)
- Pinch of salt
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the pineapple: Start by slicing off the top and bottom of the pineapple. Stand it up and carefully slice off the skin, ensuring you remove all the eyes. Then, slice the pineapple into thick wedges or round slices, about 1 inch thick.
- Mix the brown sugar mixture: In a small bowl, combine the brown sugar, cinnamon (if using), and a pinch of salt. This simple mixture will caramelize beautifully on the grill.
- Coat the pineapple: In a large bowl, toss the pineapple slices with the butter until well coated. Sprinkle the brown sugar mixture generously over each piece, ensuring every slice gets an even coating.
- Preheat the grill: Get your grill hot and ready! If you’re using a gas grill, preheat it to medium-high. For charcoal, make sure the coals are glowing hot.
- Grill the pineapple: Place the coated pineapple slices on the grill and cook for 2-3 minutes on each side, or until grill marks form and the brown sugar starts to caramelize.
- Serve and garnish: Once done, remove the grilled pineapple from the grill and let it cool slightly. Garnish with fresh mint leaves for a pop of color and added freshness.
Notes
You can slice the pineapple and prepare the brown sugar mixture a few hours ahead of time. Just store them separately in the fridge until you’re ready to grill.
