Description

A creamy and flavorful Cajun Sausage Pasta that’s quick and easy for busy weeknights.


Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 1 lb smoked sausage, sliced
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. Add the sliced smoked sausage to the same pot and cook until browned.
  3. Add the diced bell pepper, onion, and garlic, and sauté until soft.
  4. Stir in the Cajun seasoning and cook for an additional minute.
  5. Add the diced tomatoes and heavy cream, stirring to combine.
  6. Bring to a gentle simmer and allow to thicken slightly.
  7. Stir in the cooked pasta and cheese until melted and well combined.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of milk or cream to loosen the sauce.
