Ingredients

- 8 oz pasta (penne or fettuccine)
- 1 lb smoked sausage, sliced
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- Add the sliced smoked sausage to the same pot and cook until browned.
- Add the diced bell pepper, onion, and garlic, and sauté until soft.
- Stir in the Cajun seasoning and cook for an additional minute.
- Add the diced tomatoes and heavy cream, stirring to combine.
- Bring to a gentle simmer and allow to thicken slightly.
- Stir in the cooked pasta and cheese until melted and well combined.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of milk or cream to loosen the sauce.
